**Ragù-Style Meat Sauce to Make at Home (Serves 4)**

ingredients

  • Minced beef: 300g (you can also mix in pork)
  • Onion: 1 (finely chopped)
  • 1 celery stick (chopped)
  • Carrot: 1/2 (finely chopped)
  • Garlic: 1 clove (minced)
  • Red wine: 100ml
  • 1 can of canned tomatoes (chopped or whole)
  • 1 bay leaf
  • Olive oil, salt, pepper: to taste
  • Parmesan cheese (for garnishing): optional

How to cook

  1. Heat olive oil in a pot and sauté garlic, onion, celery, and carrot (for about 10 minutes, slowly drawing out the sweetness).
  2. Add the ground beef and cook until it changes color, then add red wine and let the alcohol evaporate.
  3. Add canned tomatoes, bay leaves, salt, and pepper, and simmer on low heat for at least 40 minutes to 1 hour, allowing it to cook slowly.
  4. Taste and adjust the seasoning. Finish by generously grating Parmesan cheese on top, and it's ready to serve.

For the pasta, we recommend slightly thicker, chewier noodles like tagliatelle or linguine.
